Fish meat contains unique proteins that are not found in livestock fillets. They decompose incredibly quickly. Some 5-6 hours after being caught from the reservoir, ammonia substances and sulfur compounds begin to be released. They also have a sharp amber.
Predatory fish eat their fellows. This forces their digestive system to produce enzymes in huge quantities so that the sea food can be digested. When, after the catch, the enzymes are on the predator, then after a certain time they will begin to digest it from the outside, which leads to a bad aroma. Therefore, it is recommended to gut the product as soon as possible after catching.
Unsaturated fatty acids also smell bad.
Lemon
